Ingredients
- 2 thick slices sourdough bread
- 1 ripe avocado
- 1/2 cup canned chickpeas, drained and dried
- 1 teaspoon olive oil
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon ground cumin
- 1 teaspoon lemon juice, plus wedges to serve
- Pinch of salt

Method
- Toast sourdough until crisp and golden.
- Warm oil in a small skillet over medium heat. Add chickpeas, paprika, cumin and a pinch of salt. Cook 3 to 4 minutes, shaking the pan, until chickpeas are hot and lightly colored.
- Mash avocado with lemon juice and a small pinch of salt. Spread over warm toast.
- Spoon chickpeas over avocado and finish with chili flakes, parsley and extra lemon if desired. Serve immediately.
Assemble only when ready to eat. Store leftover chickpeas separately in the refrigerator for up to 3 days; avocado browns after cutting.
