Honey Yogurt Berry Cups

About this recipe

These cups rely on contrast: cool, thick yogurt, juicy berries and oats toasted until fragrant. Honey sweetens the yogurt lightly, leaving room for the fruit to stand out. There is no oven or special equipment, and the components can be prepared ahead.

Dry washed berries before layering so they do not thin the yogurt. Toast the oats and almonds in a dry skillet, stirring so they color evenly without burning. For the best crunch, keep the topping in a separate airtight container and add it immediately before serving. Seasonal fruit can replace berries when needed.

Ingredients

  • 2 cups plain thick Greek yogurt
  • 2 tablespoons honey, plus more to serve
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries, washed and dried
  • 1/2 cup rolled oats
  • 2 tablespoons chopped almonds
  • Pinch of ground cinnamon

Method

  1. Add oats and almonds to a dry skillet over medium heat. Toast for 4 to 5 minutes, stirring frequently, until fragrant and lightly golden. Remove from heat and mix with cinnamon.
  2. Stir yogurt, honey and vanilla together in a bowl. Taste and adjust the honey if your berries are tart.
  3. Spoon yogurt into four small glasses. Add berries and finish with the toasted oat mixture.
  4. Drizzle lightly with honey and serve straight away.
Storage & helpful tip
Toast the oats ahead and store them airtight at room temperature for up to 3 days. Keep yogurt and berries chilled until serving.

Final thoughts

The dessert is most enjoyable just after assembly, with the oats still crisp. Make the yogurt mixture and topping in advance, then layer fresh fruit when it is time to eat. Small glasses make a simple finish to a meal.

Helpful cooking notes

  • Dry the berries. Water on the berries thins the yogurt and softens the oats. Pat them dry after washing.
  • Keep the crunch. Store toasted oats separately until serving. Their texture changes quickly when layered with yogurt.
  • Try another topping. Chopped pistachios or pumpkin seeds can replace almonds. Check for nut allergies before serving.
